800g granulated sugar
640g S/R flour
170g cocoa powder
1 tsp baking powder
1 tsp salt
460ml soy or almond milk
2 tablespoons instant coffee
260ml vegetable oil
1 tsp vanilla extract
Line two 10" round cake tins.
Preheat the oven to 160C or gas 4
Sift together all of the dry ingredients.
Mix the wet ingredients together and add to the dry stuff.
Gently mix to ensure a smooth batter.
Pour into prepared cake tins and bake for around 40 mins. Check to ensure the cakes are cooked, if not then leave for another 10 mins and check again.
