Karen's Spinach Cake


Ingredients - for an 8" round tin.


180g unsalted butter or Stork

3 medium eggs

500g frozen chopped spinach (thawed)

250g vegetable oil

400g S/R flour

1 tsp vanilla paste


Preparation Method


Preheat oven to 160C fan / gas 2 and line two 8" round cake tins.


Squeeze the excess liquid out of the thawed spinach.


Mix all the ingredients together.


Bake for about 50 mins.

Filling


200g double cream

250g marscapone

1 tsp vanilla paste


Preparation Method


Beat the double cream until it just starts to thicken.  Fold in the marscapone and vanilla.


Sandwich the cakes together with a layer of the filling, and cover the outside with the rest.


Decorate the finished cake with fresh fruit e.g. raspberries, blueberries, pomegranate, etc.
