Banana & walnut loaf


175g butter, softened

175g sugar (half brown, half white)

2 eggs

175g self-raising flour

175g dark or milk chocolate broken into small pieces

75g walnuts

2 very ripe bananas (about 250g total weight) - sliced/chopped

30ml milk

a little demerara sugar to sprinkle over the top of the cake.

Preparation Method

Preheat oven to 170C / 150C fan / Gas 3½

Line the base and sides of a 20cm x 12cm loaf tin with greaseproof paper.

Creaming method.

Gently fold in the rest of the ingredients and spoon into the loaf tin.

Bake 1 hr 10 mins, test with a skewer, if not cooked give another 15 mins and retest.

Top tip

- Peel the bananas before you slice them
