For fan-assisted ovens, lower the temperature by 20 degrees C
i.e. if a recipe gives a temperature of 200 C, then lower it to 180 C in a fan-assisted oven.
200C / 180C fan / Gas 6
For most cakes 180°C / 160C fan / Gas 4 is the perfect temperature.
This includes any shallow cakes such as Victoria sandwich, genoise, cup cakes & muffins.
Deeper cakes such as carrot cakes, pound cake, chocolate fudge need a longer baking time and consequently a slightly cooler temperature is needed
Very shallow cakes such as swiss roll need a higher temperature for a very short baking time.
